Need Tips for Enumerating A network behind router's and fire

I am trying to gather information about pc's behind a router/hardware fire-wall,I tried ordinary methods like nmap scanning,Port-scanning and i used some other scanner's,TBH i can't able to find any useful information other than gathering the ip address ,location of the server,dns server,contact e-mail,phone number..

But i am looking to find information such as o/s used on the server,router type or name(if possible router configuration),Want to determine presence of layer of fire-wall,detecting honey-pot's or honey-net's in the system,Exact IDS,IPS being used
in the network,

But i can't able to find single piece of information,Because i think the ordinary
method's like n-map,port scanning etc has been patched by the organization's,
So At-least give me some ideas or tips for Finding any-one of the Above information that i have been looking for, or At-least tell me what are the things i should follow
to enumerate behind a router/fire-wall..
